The Zaksensberg Juicer is the quintessential manual citrus juicer.  Its history can be traced back over 80 years to the original iron foundry operated in Jaffa by the company’s founder Isaac Zaksenberg. Management of the company has passed down the generations with the fourth generation now active in the company’s operation and development. Each iteration of the juicer have  seen improvements made to its design and manufacture with the current model a powerful expression of strength, efficiency and ease of use. The company has resisted the temptation to relocate its manufacturing to Asia. Retaining manufacturing in house in Israel, it has been able to ensure each juicer is produced to an excellent standard and finish.

The juicer differs from other manual citrus juicers in a number of ways:

 

SIZE

The juicer is big. It is 53cm high, 27.5 cm deep and 18.5cm wide and weighs 9.7kg. The length of the arm is the longest in its class and accordingly produces a tremendous amount of leverage even enabling it to juice pomegranates.

STRENGTH

The juicer is made of steel and epoxy coated for durability. Bolts and washers are nickel plated. The plastic components that come into contact with the fruit and juice are especially strong and meet F.D.A regulations. Operation of the arm is smooth and precise and teflon washers eliminate lateral movement. The machine is largely maintenance free and requires only modest periodic oiling.

STABILITY

The base of the juicer extends beyond the shaft in a letter “H “shape. The juicer is extremely stable and can be operated with one hand. The holes in the juicer base allow it to be fastened to a board or bench top for additional stability. The base, lower shaft section and central piece form an integrated unit. The mass of the juicer is concentrated in the bottom half, providing a low centre of gravity and stability.

STRAINER AND CONE

The strainer is stepped rather than rounded. When pressed, the fruit is gripped by the discrete steps and the flesh remains within the fruit half whereas a rounded strainer tends to push the flesh out from the fruit resulting in less efficient juice extraction. The strainer is 12 cm in diameter with a shallow profile and wide enough to accommodate grapefruits. The cone is splayed, fully encompasses the fruit and extends to 5mm from the edge of the strainer to capture any splash.

EFFICIENCY

The juicer is amazingly efficient producing excellent extraction with little effort. The juicer will fill a 220ml glass with two size 80 oranges. When the orange is pressed, the skin stays largely intact reducing the amount of skin oil extracted to create a sweeter drink.
